How about aircraft disassembly? I know it would be hard to do, but there are enough cross-section books around to go from.

Aircraft disassembly would be good as it would provide an insight into the workings of aircraft and maybe workings of aircraft engines

engines will be separate app... one aircraft will be more than 100 000 polygons it is to much even for iPad 2
